RESUMO: As condições climáticas da região Centro-Norte do Estado de Mato Grosso são favoráveis a apicultura, contudo ocorrem prejuízos nesta cadeia produtiva desde 2011 devido a produção de mel com odor indesejável, o que impossibilitou sua comercialização. Relatos dos apicultores apontaram relação da ocorrência do odor indesejável no mel com o néctar Borreria verticillata (L.) G. Mey (Rubiaceae). Neste estudo foi avaliado a origem botânica e o perfil de voláteis de méis (M1 até M10) com odor indesejável e das flores de B. verticillata. Foi realizada a análise polínica do mel e também sensorial, empregando-se uma escala de um a quatro pontos, em que um refere-se a nenhum odor desagradável e quatro, extremo odor desagradável. A análise de compostos voláteis no mel e nas flores de B. verticillata foi realizada utilizando microextração em fase sólida por headspace e cromatografia gasosa acoplada a detector por espectrometria de massas. Os méis investigados foram classificados desde muito a extremo odor desagradável, exceto os méis M4 e M5, que não diferiram do mel controle (sem odor indesejável). Os méis M1 até M4, M7 e M9 eram monoflorais de B. verticillata, enquanto M5, M6, M8 e M10 o pólen B. verticillata era acessório. Todavia, não foi observada correlação quantitativa entre o teor deste pólen e o atributo odor indesejável. O escatol foi identificado nos méis investigados, exceto em M4, M5 e mel controle. Estes resultados sugerem que o escatol contribuiu para o atributo odor desagradável do produto. Contudo, mais estudos devem ser conduzidos para investigar a origem do odor indesejável, porque o escatol não foi transferido diretamente das flores para o mel.

ABSTRACT: Climatic conditions in the mid-northern region of Mato Grosso State in Brazil are favorable for beekeeping. However, since 2011, the honey production chain has suffered losses because the production of off-odor honey has made it impossible to market the honey. Reports from beekeepers indicated a relationship between the off-odor in the honey and the nectar of Borreria verticillata (L.) G. Mey (Rubiaceae). In this study, the botanical origins and volatile profiles of ten off-odor honeys (H1-H10) and flowers of B. verticillata were evaluated. Palynological and sensorial analyses of the honeys were performed; a scale from 1 to 4 was applied for the sensorial analysis, in which 1 indicates no off-odor and 4 indicates extreme off-odor. Analysis of volatile was performed by using headspace solid-phase microextraction and gas chromatography-mass spectroscopy methods. The honeys investigated were classified with very high to intense off-odors, except H4 and H5, which did not differ from the control honey (no off-odor). Palynological analyses showed that honeys H1-H4, H7, and H9 were monofloral from B. verticillata, whereas in H5, H6, H8, and H10 this pollen were accessory. However, there was no quantitative correlation between the B. verticillata pollen content and the off-odor attributes of the honeys. Skatole was identified in all of the honeys except H4, H5, and the control honeys, suggesting that skatole contributed to the off-odor attributes of the products. However, further studies are required to investigate the origin of the skatole because it is not transferred directly from B. verticillata flowers to the honey.

Neste estudo foi investigada a atividade no controle in vitro de Fusarium proliferatum, a composição química e a atividade antioxidante de oito extratos etanólicos de própolis (EEP) produzidos no Brasil, seis da região norte do estado de Mato Grosso, (EEP-1 até EEP-4, EEP-6 e EEP-7); um do estado da Bahia, Brasil (EEP-5) e a própolis verde do estado de Minas Gerais, Brasil (EEP-8). Foi avaliado o efeito dos EEP na percentagem de inibição do crescimento micelial (PIC) e na esporulação de macroconídios e microconídios de Fusarium proliferatum e comparado com o controle (etanol 70%). Os extratos EEP-4 até EEP-8 a 2% apresentaram PIC significativos em relação ao controle. O EEP-8 a 2% se destacou com o mais alto PIC de Fusarium proliferatum e o maior potencial antioxidante. De entre os EEP que apresentaram ação antifúngica significativa os EEP-8 e EEP-4 apresentaram os maiores teores de flavonoides totais e o EEP-6 destacou-se com os teores superiores de fenólicos totais. Todos os EEP investigados, exceto o EEP1, provocaram redução de mais de 70% na esporulação de macroconídios. Os EEP-4 e EEP-8 apresentaram predominância dos flavonóides quercitina e campferol e o EEP-6 do ácido cafeico. Estes compostos antioxidantes podem ter contribuído para a atividade antifúngica dos extratos.

In this study, we investigated the in vitro activity against Fusarium proliferatum, chemical characteristics, and antioxidant potential of eight propolis ethanolic extracts (PEE) from Brazil-six from the northern region of the state of Mato Grosso (PEE-1 to PEE-4, PEE-6, and PEE-7), one from the state of Bahia (PEE-5), and the green propolis from Minas Gerais state (PEE-8). The percentage of mycelial growth inhibition (PMGI), and macroconidia and microconidia sporulation of Fusarium proliferatum of these PEEs were evaluated and compared with that of the control (ethanol 70%). The 2% concentrations of PEE-4 to PEE-8 showed significant PMGI in relation to the control. PEE-8 at 2% stood out with the highest PMGI of Fusarium proliferatum and highest antioxidant potential. Among the PEEs that exhibited a significant antifungal action, PEE-8 and PEE-4 presented the highest total flavonoid content and PEE-6 stood out with the highest total phenolic content. Except PEE-1, all the extracts tested showed a reduction of more than 70% in the sporulation of macroconidia PEE-4 and PEE-8 presented predominance of quercetin and kaempferol flavonoids and PEE-6 of caffeic acid. Therefore, the presence of these antioxidant compounds may have contributed to the antifungal activity of these extracts.

ABSTRACT Bertholletia excelsa (Brazil nut) is the only representative of the Bertholletia genus, but presents great phenotypic variability. The objective of this study was to characterize the fruits, seeds and crude oil of Brazil nuts from the state of Mato Grosso, Brazil. Fruit and seeds from adult trees were collected at the municipalities of Alta Floresta, Cotriguaçu, Itaúba and Juína. Physical characteristics, yield and composition of the seeds, as well as crude oil characteristics were evaluated. The fruits produced in Itaúba were the smallest and had the lowest number of seeds, while those from Juína presented larger size and mass. The nuts produced in Itaúba had the lowest mean unit mass and ten-seed mass values. The seeds produced in Juína presented higher lipid content and lower ash content. The selenium content of the nuts was higher in Cotriguaçu. There were no significant differences in fruit peel thickness, yield and protein content of the nuts or characteristics of the crude oil.

RESUMO As castanhas-do-brasil são um importante produto da floresta amazônica e destacam-se pelo seu alto valor nutricional. Contudo, os efeitos da embalagem sobre a vida de prateleira das castanhas não estão completamente esclarecidos. Sendo assim, neste estudo, avaliou-se a qualidade microbiológica e nutricional de castanhas-do-brasil descascadas, embaladas em (a) nylon mais polipropileno a vácuo e (b) filmes aluminizados de polietileno tereftalato (PET) e polietileno (PE). As castanhas foram armazenadas por um período de nove meses, sob condições ambientais naturais. Logo após a coleta, e a cada três meses, foram determinados nas castanhas o número mais provável de coliformes totais, coliformes termotolerantes e Escherichia coli, e contagem total de bolores e leveduras. Também foram medidos os teores de umidade, lipídeos, cinzas, fibra em detergente neutro e fibra em detergente ácido por métodos gravimétricos, e os teores de proteína bruta por meio do método de Kjeldahl. Os níveis de coliformes termotolerantes estiveram dentro dos padrões da legislação nos dois tipos de embalagem. A incidência de bolores e leveduras aumentou ao longo do tempo nas duas embalagens (de 0,1x10¹ a 9,5x10³ unidades formadoras de colônia; UFC g-1), porém somente a embalagem aluminizada apresentou aumento significativo após seis meses de armazenamento. Após nove meses, as castanhas nas duas embalagens apresentaram boa qualidade nutricional, porém a embalagem aluminizada apresentou melhor conservação da fração lipídica e menor permeabilidade a vapores de água. Contudo, a embalagem a vácuo foi mais eficiente no controle do crescimento de fungos, possivelmente devido à ausência de oxigênio.

ABSTRACT The Brazil nut is an important commodity that grows in the Amazon rainforest and is notable for its high nutritional value. However, the effect that packaging has on product shelf-life is unclear. This study evaluated the microbiological and nutritional quality of unshelled Brazil nuts packed in (a) nylon and polypropylene under vacuum, and (b) in polyethylene terephthalate and polyethylene aluminized films. The nuts were stored for nine months under natural environmental conditions. The most probable number of total and thermotolerant coliforms and Escherichia coli, and counting of molds and yeast were determined in the unshelled nuts shortly after collection and every three months during storage. Moisture, lipids, ash, neutral detergent fiber, and acid detergent fiber contents were measured by the gravimetric method. Crude protein content was measured using the Kjeldahl method. Coliform levels were within legislated standards in both types of packaging. Mold and yeast growth increased with time in both types of packaging (0.1x10¹ to 9.5x10³ colony forming units g-1), but only nuts packaged in aluminum film showed a significant increase after six months of storage. After nine months of storage, both types of packaged nuts had good nutritional quality. Aluminized packaging resulted in better conservation of the lipid fraction and lower permeability to water vapor, however, vacuum packaging was more effective in controlling fungal growth, possibly due to the lack of oxygen.

As hortaliças não-convencionais apresentam maiores teores de nutrientes do que as convencionais, contudo seu potencial de produção e consumo é negligenciado, havendo poucas informações sobre a composição química destas espécies. Neste trabalho determinaram-se os teores de ácido ascórbico (vitamina C) e de minerais das seguintes hortaliças folhosas não-convencionais: taioba, ora-pro-nobis, bertalha e beldroega. As folhas de taioba apresentaram os maiores teores de ácido ascórbico (198,33 mg 100 g-1 de matéria fresca) e de nitrogênio (5,02 g 100 g-1), boro (0,0032 g 100 g-1) e manganês (0,007 g 100 g-1), na matéria seca (MS). As folhas da ora-pro-nobis apresentaram teores similares de ácido ascórbico e os maiores de fósforo (0,45 g 100 g-1MS) e de magnésio (0,68 g 100 g-1MS). Nas folhas da beldroega verificaram-se o maiores teores de ferro (0,032 g 100 g-1MS) e de cálcio (2,39 g 100 g-1MS). Quanto aos níveis de zinco as espécies que se destacaram foram a bertalha (0,0057 g 100 g-1MS) e a ora-pro-nobis (0,0059 g 100 g-1MS). Não houve diferença significativa entre as espécies com relação ao nível de potássio (3,71 a 3,87 g 100 g-1MS). Verificou-se que as espécies estudadas poderão se tornar boas fontes de acido ascórbico e minerais com a difusão de seu uso pela população.

Non-conventional vegetables show higher nutrient levels than the conventional ones, but their potential for production and consumption has been neglected and there have been few studies about their chemical composition. This study has investigated the levels of ascorbic acid (vitamin C) and minerals in the following non-conventional leafy vegetables: taro, ora-pro-nobis, bertalha and purslane. The taro leaves showed the highest levels of ascorbic acid (198.33 mg 100 g-1 fresh weight) and nitrogen (5.02 g 100 g-1), boron (0.0032 g 100 g-1), manganese (0.0069 g 100 g-1), in dry matter (DM). The leaves of ora-pro-nobis showed similar levels of ascorbic acid and the highest levels of phosphorus (0.45 g 100 g-1DM) and magnesium (0.68 g 100 g-1DM). In purslane leaves there were the highest iron (0.0324 g 100 g-1DM) and calcium (2.39 g 100 g-1DM) content. Concerning to zinc levels, the species that stood out were bertalha (0.0057 g 100 g-1DM) and ora-pro-nobis (0.0059 g 100 g-1DM). As for potassium, there was no significant difference amongst species (3.71 to 3.87 g 100 g-1DM). These species may become good sources of ascorbic acid and minerals with the spread of their use by the population.

No Brasil, a farinha de folhas de mandioca (FFM) vem sendo usada no combate à desnutrição por ser fonte de vitaminas e minerais. Todavia, a grande variação na composição química dos diferentes cultivares e a presença de substâncias antinutricionais tem restringido o seu uso. Investigaram-se os níveis de alguns antinutrientes da FFM de cinco cultivares em três idades da planta (TIP), a fim de selecionar cultivares e idades mais adequadas para o consumo humano. Aos 12 meses foram observados os menores teores de antinutrientes, exceto para nitrato e hemaglutinina, os quais foram inferiores aos 17 meses. O cultivar IAC 289-70 destacou-se com os menores níveis dos antinutrientes, exceto para a saponina e oxalato. Portanto, o cultivar IAC 289-70, aos 12 meses, é o mais adequado para o consumo humano.

In Brazil, the cassava leaf meal (CLM) has been used to strive against undernourishment because it is a high source of vitamins and minerals. However, the wide variation in the chemical composition of the different cultivars, as well as their antinutritional substances may be a restriction to their uses. The levels of some antinutrients in CLM from five cultivars at three ages of the plant (TAP) were investigated, in order to select the cultivars and plant ages that would be more appropriate for human consumption. The lowest contents of antinutrients were observed in the 12-month old plants, except for nitrate and hemagglutinin from which the lowest contents were found for the 17 month old ones. The cultivar IAC 289-70 had the lowest antinutrient levels, except for saponin and oxalate. Thus, the cultivar IAC 289-70 at 12 months is the most appropriate for human consumption.

O número elevado de cultivares de mandioca adaptados às mais diversas regiões confere ampla variação na composição química da farinha de folhas de mandioca (FFM). Portanto, foram investigados os teores de alguns nutrientes nas FFM de cinco cultivares em três idades da planta, a fim de selecionar cultivares e idades com níveis superiores destes nutrientes. Aos 12 meses de idade da planta, observaram-se os maiores níveis de proteína bruta (PB), beta-caroteno, ferro, magnésio, fósforo e enxofre. O cultivar IAC 289-70 apresentou os maiores níveis de magnésio, assim como teores apreciáveis de PB, beta-caroteno, ferro, zinco e enxofre, pois não diferiu estatisticamente dos cultivares com os níveis mais elevados destes nutrientes.

The high number of cassava cultivars adapted to many different regions provides a wide variation in the chemical composition of cassava leaves meal (CLM). Therefore, the contents of some nutrients in CLM from five cultivars at three ages of the plant were investigated in order to select the cultivars and ages with superior levels of these nutrients. When the plants were 12 months old, the highest levels of crude protein (CP), beta-carotene, iron, magnesium, phosphorus and sulfur were observed. The IAC 289-70 cv. showed the highest levels of magnesium, as well as considerable contents of CP, beta-carotene, iron, zinc and sulfur, which did not differ statistically from the cultivars showing the highest levels of these nutrients.

No Brasil, a farinha de folhas de mandioca (FFM) vem sendo usada no combate à desnutrição, por ser fonte de vitaminas e minerais, além de ser um subproduto de ampla disponibilidade e baixo custo. Porém, a toxicidade, devido à presença de cianeto, pode restringir seu uso na alimentação humana. Determinaram-se os teores de cianeto nas folhas e nas FFM de cinco cultivares (Ouro do Vale, Maracanã, Mantiqueira IAC 24-2, IAC 289-70 e Mocotó), a fim de selecionar a cultivar com menores níveis desse antinutriente. Constatou-se que as cultivares apresentaram diferentes teores de cianeto e percentuais de perdas, destacando-se a IAC 289-70, com os níveis mais baixos e os maiores percentuais de perdas de cianeto. Portanto, antes de se indicar uma cultivar para a inclusão na dieta da população, faz-se necessário avaliar os teores de cianeto.

In Brazil, cassava leaves flour (CLF) has been used to combat undernourish, because it is a source of vitamins and minerals. Besides that, it is a sub-product of wide availability and low cost material. However, the toxicity, due to the presence of cyanide, can restrict its use for human feeding. The contents of cyanide in leaves and in CLF of five cultivars (Ouro do Vale, Maracanã, Mantiqueira IAC 24-2, IAC 289-70 and Mocotó), were determined, in order to select cultivars with smallest levels of these substance. It was verified that cultivars presented different levels of cyanide and percentile of losses, standing out the IAC 289-70 with the lowest levels and the largest losses of cyanide. Therefore, before indicating a cultivar for the inclusion in the population diet it is necessary to evaluate the contents of cyanide.
